Recipe: Strawberry Rhubarb Slab Pie

Strawberry Rhubarb Slab Pie with Oatmeal Crumb Topping

A more freeform version of the traditional dessert, this slab pie is great for kids to join in the baking process without you stressing about a perfectly circular crust. Even better? Your kiddo will get to push the buttons on the food processor lots and lots of times.

FILLING:

4 cups sliced rhubarb
2 1/2 cups sliced strawberries
1 cup sugar
2 lemons, zest and juice
1/4 cup cornstarch

CRUST: 

2 1/2 cups flour
3 tablespoons sugar
1 cup unsalted butter, cold and cut into 1” chunks
2 egg yolks
1/4 to 1/2 cup ice water

TOPPING:
1 cup almond flour
1 cup brown sugar
1/2 cup oats
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup unsalted butter, cold and cut into 1” chunks

FOR CRUST:  Put dry ingredients in bowl of food processor. Add butter and pulse 8-10 times. In a small bowl, combine egg yolks and 1/4 cup ice water.  Pour mixture into food processor while running until dough just holds together. Form dough into a solid disk and wrap in plastic. Chill at least one hour.

FILLING: Combine all ingredients in a large bowl.

TOPPING: Put dry ingredients into the bowl of food processor. Pulse to combine. Add butter and pulse until ingredients resemble a coarse meal.

ASSEMBLY: Preheat oven to 375ºF. Using a rimmed baking sheet, use your hands to freeform pat the crust close to the edges. Layer on filling, centering in the dough.  Add crumb topping. Bake in preheated oven about 40 minutes until filling is bubbly and top is golden brown. Serve with ice cream or whipped cream.
